Crispy Air Fryer Chicken with Mash & Gravy

Ingredients:
- 2 chicken cutlets
- 1 tbsp mayo
- 1/4 cup panko breadcrumbs
- 1/4 cup Parmesan cheese
- 1/2 tbsp Misfit Spices
- 8-10 Yukon golf potatoes, cut into 1 inch pieces
- 2 tbsp sour cream
- 2 tbsp butter
- 1 cup chicken broth
- 1 tbsp cornstarch
- 1 cup cold water

Directions:
1. In a medium pot add potatoes, water just enough to cover and some salt. Bring to a bowl and cook until tender, about 15-20 min.
2. Pound your chicken even and season with Misfit Spices. Rub with mayo evenly all over. Mix Parmesan and panko together in a small bowl and adhere to all sides of chicken, coating evenly.
3. Heat air fryer to 400F and spray with a non stick cooking spray. Add chicken and cook for 10 min.
4. In a small pot add chicken broth. Heat it over medium low heat. In a cup add your cold water and cornstarch. Mixing well. Slowly add to your chicken broth stirring occasionally. Keep adding until it reaches the thickness you prefer your gravy. Should take about 6-8 min. Season with some salt, pepper, garlic powder, onion powder, and sage if ya like!
5. Once potatoes are done, drain. Add back to pot with sour cream, butter, salt and pepper. Mash well. Taste and adjust to your liking.
6. Plate mash, chicken and then smother with gravy. So freaking good and simple! Sure to please anyone.
