Instant Pot Meatloaf & Roasted Garlic Mash
Another great quick and easy recipe made with Misfit Spices. This recipe uses our No Salt version of Bringin’ Heat and overall is sodium friendly. Of course if you are not watching your salt intake you can always choose your favorite Misfit Spice flavor in it’s place.
Mashed Potatoes
3 lbs. Yukon Gold potatoes, peeled and cut in half
half ’n half as needed
3/4 c. low salt vegetable, beef, or chicken broth
3- 4 Tbsp. grass fed butter
2 Tbsp. Misfit Spices Roasted Garlic Mushroom spice blend
Meatloaf
1 lb. Grass fed and finished 95/5 Beef
1 c. Rolled oats
1 4 oz. can tomato paste, divided in half
1 Tbsp. brown sugar
1 Tbsp. Braggs cider vinegar
2 Tbsp. Misfit Spices No Salt Bringin’ Heat spice blend
1/2 c. shredded parmesan cheese
1 Tbsp. rosemary
1 Tbsp. minced garlic
1 cage free large egg
Prep:
Wash, peel (if desired) and halve potatoes and arrange in bottom of Instant Pot
Pour 3/4 c. broth in bottom of Instant Pot.
Set rack with handles on top of potato layer
Line round cake or spring form pan with aluminum foil (for easy removal and clean up) and spray with avocado oil
(A pan can be made out of foil for the meatloaf if you don’t have a pan that will fit in/work with your Instant Pot)
In a large bowl, thoroughly mix together beef, oats, 1/2 tomato paste, Bringin’ Heat, rosemary, Parmesan cheese, minced garlic, and egg.
Press meat mixture into foil lined pan (or form into loaf and set in ‘pan’ made from foil.
Combine 1/2 of the tomato paste, the brown sugar, and cider vinegar into a paste. Spread over top of the meatloaf.
Set the pan with meatloaf on top of rack in the Instant Pot. Close lid and be sure pressure valve is closed.
Set Manual Pressure setting to 20 minutes.
When finished, quick release pressure. Using handles on rack, lift pan with meatloaf out and set aside.
Add butter and Roasted Garlic Mushroom spice to the potatoes and broth in the bottom of pan and mash, adding half ’n half as needed.*
*If it looks like there is too much liquid in with the potatoes, you can pour some off, then add back in if needed or use half ’n half instead.
Serve with a side of your favorite steamed veggies or a dinner salad.
