Juiciest Chicken Ever

Our Friend over @holdmygfbeer has done it again. This chicken looks amazing and sounds so easy. I’m going to let her walk us through the recipe because I don’t think I can do it justice.

Ever seen a woman eat a 6 lb chicken in one sitting?? This bird was soooo juicy and crispy that I seriously considered not even telling the husband I made it so I could just finish it off myself!

This 'juiciest chicken ever' was SPATCHCOCKED AND SOUS VIDE WHOLE CHICKEN. Don't let the words sway you. "spatchcocked" + "sous vide" = "SUPER EASY!!". Trust me... I was a math major!

Spatchcock simply means to snip out the backbone with those kitchen shears you rarely use so it lays out flatly... or am I the only one that forgets I have kitchen shears until moments like this??

Then, coat the bird with your favorite seasonings... both sides (I used @misfitspices Original Blend, paprika, and ancho chili powder).
Place the chicken into a big-ass plastic zipper bag and sous vide at 148 F for 6 hours before giving the skin an attentive drying and then letting it crisp under the broiler for about 8 minutes, rotating half-way through. That's it... mostly hands-off and very little clean-up.

If you think those rotisserie chickens you get at the grocery store are good... I am sorry. This is about to change your mind forever!... NOT bragging... just saying.
