Misfit BBQ Grilled Chicken w/ Roasted Root Veggies and Sweet Corn

Ingredients:
- 2 chicken cutlets
- 2 tbsp misfit original spice mix
- 1/4 cup sweet potatoes, diced
- 1/4 cup red potatoes, diced
- 1/4 cup parsnips, diced
- 1/4 cup carrots, diced
- 1 tbsp olive oil
- 2 corn on the cobs(in husk still)
- 2 tbsp of your fav bbq sauce
Directions:
1. Rub chicken with 1/2 of the misfit spice mix. Let rub sit at room temp for 30 min to really give the chicken a good flavor.
2. Preheat oven to 425F. On a sheet tray add all your root veggies with a drizzle of olive oil, the rest of the misfit spice mix, and some salt and pepper and toss well. Cook for 20-25 min until golden brown.
3. Turn on the grill and add corn and flip every 5 min for 20 min.
4. Add chicken when you have 10-12 min left and flip half way. Once chicken is done, add your bbq sauce.
5. Plate everything and top corn with butter and salt, if that’s your thing cuz it’s surely mine. Enjoy!
