Misfit Potato Salad
Talk about a crowd pleasing side dish! You can make this potato salad recipe in advance. if you’d like, which we typically do the night before. This gives the potatoes plenty of time to soak-up all of the bold Misfit flavors. Here’s what you’ll need:
8 medium Yukon Gold potatoes (about 3 lbs.), diced, cooked
You can use any potato you’d like, but there are our go-to for this recipe
6 hard boiled eggs, chopped
½ cup diced celery
½ cup pickles, chopped
We love Grillo's Pickles Half Sour Pickles
1 ½ cups mayonnaise
3 tablespoons mustard
1 - 2 TBSP of Misfit Spices Original Blend (amount depends on your taste)
a little salt to taste
Here’s how to bring it all together:
Peel and dice potatoes; cover with cold water in a large pan. Bring to a boil. Reduce heat and gently boil for about 15 minutes, or until potatoes are tender.
Allow the potatoes to fully cool. If you want to speed the process up, you can rinse in cold water.
In another bowl mix together the mayonnaise, mustard, Misfit Spices, and salt.
Add the diced potatoes, celery, and pickles to the mixture and stir until everything is coated.
Stir in the eggs.
Refrigerate until chilled. Then impress the heck out of people when they taste it :)
